Recipe of the Month: Protein-packed Choco-chip Muffins

Ingredients: 

  • 30g Tapioca flour
  • 14g Coconut Flour
  • 1tsp Baking powder
  • 2tsp Coconut oil
  • 2 scoops Z&M Hardcore Chocolate Whey Protein
  • 1tbsp Cacao Powder
  • 1tbsp Honey (optional)
  • 1 Whole egg
  • 1 Egg white
  • 100g low-fat yogurt
  • Muffin tray sprayed with pan canola oil 


Method: 

Step 1: Preheat the oven to 170 degrees (Celsius)

Step 2: Mix all the dry ingredients except the baking powder in a large bowl

Step 3: Add the egg, the egg white, the yogurt, and coconut oil and mix well

Step 4: Finally mix in the baking powder and put the batter into the muffin tray. Let the muffins bake for around 15-20 minutes and then enjoy!
